As the weather gets warmer, it’s especially important that we start to lighten up our meals. This doesn’t mean eating less, but eating more in sync with the seasons. It’s actually proven to be very beneficial, especially if you can eat things grown more locally, as it helps our bodies naturally rhythm. I have a few breakfast ideas for warmer days that I thought I would share. These are things that you can just use what you already have at home by subbing out ingredients. BREAKFAST TACOS
I love spicing up my normal eggs by scrambling them (plain with a little olive oil in the pan), piling them onto a Siete almond flour tortilla, adding avocado, red onion, tomatoes, and a little arugula. So easy and delicious!
COCONUT YOGURT BOWL
I love a simple yogurt bowl with coconut yogurt and fruit. I love GT’s coconut yogurt, Cocojune, Anita’s, or CoYo. I often add banana and berries with a little cinnamon, but you can also do mango or add other toppings like honey, cacao nibs, hemp seeds, chia seeds, or goji berries.
COCONUT SMOOTHIE
My favorite smoothie of all time is the Butcher’s Daughter 7 minutes in heaven. I decided to try and recreate it and I have to say it turned out amazing! It’s perfect for warmer days ahead :) I used 1 cup of Three Trees almond milk, 1 date, 1 tbsp of almond butter, 1/2 frozen banana, a small handful of cacao nibs, and a small handful of shredded coconut!
