EASTER ESSENTIALS

Hello Everyone! I’m so excited for today’s post as Easter is one of my favorite holidays. As I do with every special occasion, I love doing special themed activities and trying to make some of my childhood favorites a little bit healthier. I have dyed my Easter eggs using vegetables before, and wanted to do it again this year! It’s such a fun activity and the eggs come out so beautifully. I actually found a new trick this year to making my eggs marbled, using a surprising technique of ziploc bags and butter :) In keeping with the Easter theme, I also made a carrot cake from my favorite, Sweet Laurel. It is AMAZING! I hope this gives you some springtime inspiration of some happy activities that are sure to brighten your day!

NATURAL EGG DYE

For blue eggs, I used a whole red cabbage, chopped, and brought it to a boil in water. Then I reduced the heat and simmered for 30 mins. I then added 2 tbsp of salt and 2 tbsp of white vinegar. I then drained the liquid into a glass bowl and waited for it to cool.

For the yellow eggs, I sprinkled some turmeric and a little white vinegar in a bowl and mixed well. I then rolled the eggs around in the mixture and used a paper towel to wipe them clean.

For the pink eggs, I used fresh beet juice. I dipped my finger in and used a little bit to spread over the egg. A little goes a long way :) These vegetable all stain so be careful! To get the marble effect, I followed this guide here.

PALEO CARROT CAKE

I used the recipe found in the Sweet Laurel cookbook. All I can say is YUM! Also you can buy pre-shredded carrots to save time, but I shredded my own. This cake is gluten free, grain free, refined sugar free, and dairy free.
